Chiller Assessment
What is the course about?
To assess beef under the AUS-MEAT Chiller Assessment System you must be qualified as a chiller assessor with AUS-MEAT. To become a qualified Chiller Assessor, you need to attend the AUS-MEAT Chiller Assessment course and pass both the practical and theory components.
Participants will be directly involved in demonstration and explanation of:
- The application of the AUS-MEAT Chiller Assessment Language
- Carcase pre-conditions for chiller assessment
- Chiller assessment techniques
- Chiller assessment attributes
- Carcase eligibility for the Grain Fed Beef program
- Onsite Correlation and Practice Program (OsCap™)
- Handling non-conforming product
- Managing chiller assessment equipment
- Providing carcase feedback
What do I do if I need to cancel my booking?
Please contact AUS-MEAT immediately to avoid any cancellation fees. Full payment is required no later than 5 days prior to the commencement of training. A 50% cancellation fee will apply on cancellations received less than 10 working days prior to commencement of training.
NO refunds are given for cancellations received less than 5 working days prior to the commencement of training. Any transfers between courses will incur a $100 fee on each instance.

Your courses fees paid cover the following items
- Course tuition
- Facility hire
- Workbooks and assessments
- Morning tea and lunch
- Issue of certificate
Who should attend?
- Any person wishing to assess beef carcases using the Chiller Assessment Language.
- Any person wishing to allocate the GF and GFYG symbols.
- Any person who is to monitor the compliance of an accredited chiller assessor as part of an establishment’s approved quality assurance system.
- Any person who wishes to complete the MSA Grading qualification.
English is not my first language! Will I have problems?
All AUS-MEAT training courses are presented in English. A sound understanding of the English language is required. All workbooks and assessments are conducted in English. If required, the use of dictionaries or tablets are acceptable.

How will you be assessed?
During the course participants will be required to submit both practical and theory assessments. Industry standard correlations will then need to be completed using the Onsite Correlation and Practice Program (OsCap™). This can only be done through an Accredited AUS-MEAT processing establishment with an approved chiller assessment program. These must be completed within 8 weeks of the theory component of the training. - Practical assessments of the allocation of the Grain Fed and Grain Fed Young Beef symbols. 100% Pass. If you fail your first attempt, you can resit this assessment later in the week.
- Your practical ability will be assessed over the 5 days of the course.
- There will be an "open book" theory assessment. This means you can use your reference books, handwritten notes and the course workbook during the assessment. You must achieve a minimum of 70 % to pass.
Issue of Certificates
At the successful completion of this course, you will be issued with a Statement of Attainment.
The Unit of Competency issued is:
AMPQUA415 “Specify beef product using AUS-MEAT language”.
This Unit within the Certificate IV in Meat Processing AMP40222 qualification.
This Unit is a pre-requisite for MSA Grading

Eye Test & Q Fever Vaccination:
Each Participant must provide evidence of ability to determine colour in the red and yellow spectrums
and their Q Fever Vaccination.
Do I need to bring anything?
You will need to bring the following to the course:
- Warm clothing as we will spend a large amount of time in carcase chillers (max. 10 °C).
- Closed in comfy shoes
- Allow a change of clothing for laundry purpose
- All protective clothing for entering production areas will be supplied by the hosting processor
Entry Requirements
Must either work for or have access to an AUS-MEAT Accredited processing establishment with an approved Chiller Assessment program.
At the course:
This is not an "attendance only" course.
- AUS-MEAT has set standards and expects all potential animal welfare auditors to meet the minimum standards.
- Your success depends largely on your own input into the course.
- The Trainer/s will assist you to develop studying techniques.
- Please feel free to ask the Trainer/s any questions during the course.
- Reviewing the day's material at night will help reinforce concepts introduced at the course.
- The course will involve group activities and discussions, please participate enthusiastically.
